My very favorite cake recipe is from Swans Down Cake Flour Company, and according to their site, it is also the most requested recipe they have! The recipe is called 1-2-3-4 Pound Cake and that in itself should give you a clue as to why I love it so much. It’s simple, made with ingredients I always have on hand, and is always a huge hit. Even with a name like “pound cake”, this recipe makes the perfect white cake for just about any cake needs.
On the docket today? Mini cupcakes with Wilton’s fabulous vanilla buttercream and strawberries. I know I’ve sent you in the direction of Wilton’s buttercream recipe before, but really, why reinvent the wheel? It is light, creamy, and just perfect.
I garnished the cupcakes with strawberries sliced top to bottom. I also used some grated lime peel to add a bit of color.
Like I said, I made mini cupcakes today. However, This same idea would work really well with full sized cupcakes or even a full cake. On a full cake, I think using the strawberry slices to create a flower pattern would be beautiful!
