I recently came across this recipe while sorting through my recipe box. It’s an old recipe from my mom and I not quite sure where she got it. It was a spur of the moment decision to make this cake, but I’m glad I did! Unbelievably simple, this recipe makes for one light, chocolatey, and rich dessert.
It doesn’t take much to make and can be mixed up in less than 15 minutes. Because of the simplicity, this cake is a perfect recipe for company, last minute or planned. This Cocoa Fudge Cake can be served plain (like a brownie), iced, or topped with just about anything else you can think of.
This week I sliced it into squares and layered each square with blackberry jam and then dusted the top with powdered sugar. Ready for the recipe?
1 2/3 cup All-purpose Flour
1 1/2 cup sugar
2/3 cup cocoa
1 1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cup buttermilk
1/2 cup butter – softened
1 teaspoon vanilla
Make it Happen:
Heat the oven to 350°.
Grease and flour a 9″x13″ pan or two round cake pans.
Beat the butter until smooth. Add the vanilla, sugar, and eggs. Mix until smooth.
Add all dry ingredients and buttermilk.
Mix all ingredients for 3 minutes, the lumps will work out.
Bake for 30-45 minutes, or until a tooth pick inserted into the middle comes out clean.
