Cucumber sandwiches are quite the popular tea party food, and for some I think that a tea party isn’t complete without them. With about 15 minutes and a very simple ingredient list, you can make this classic tea sandwich!
The first step is slice the cucumber thinly. The next step is to ‘sweat’ your sliced cucumber. To sweat cucumbers, you will need to place the slices in a colander and salt them heavily. The salt will naturally draw the water out of the cucumber, leaving you with more crisp cucumber slices.
While your cucumber is busy working hard and sweating, slice your favorite bread. I’m using a fabulous English Muffin Bread from King Arthur Flour for the base on this one. After slicing the bread, I used a biscuit cutter to make rounds.
Spread a thin layer of soft butter on each slice of bread. You can also use cream cheese, which lends itself to a more intense flavor and richness.
Leave the cucumbers to sweat for about ten minutes and then pat both sides of the cucumber dry. Layer the slices on your buttered bread. I chose to make open-face sandwiches today, but cucumber sandwiches can also be made with two slices of bread.
I garnished these with a little dash of black pepper. Dill is also delicious on cucumber sandwiches.
