We love tea parties around here. Really, I know it is hard to believe, but we just do. A full afternoon tea is always welcome, but it is often just as enjoyable to settle down for a moment of peace with a pot of tea and a bit of something sweet.
One of my hands-down, gotta-have-it, favorite tea time treats is shortbread. The simplicity and sweetness of good shortbread pairs so well with the flavors of a steaming pot of tea, it’s hard to go wrong! My favorite recipe for shortbread is quick to throw together and is always delicious.
1 pound butter
3/4 cup of sugar
4 1/2 cups of flour
1/4 teaspoon of salt, if unsalted butter is used
Mix all ingredients together and knead until smooth.
Press dough into a 10″ x 15″ pan lined with brown paper.
Prick shortbread all over with fork and press around edges.
Bake at 325 degrees for 45-60 minutes until light golden brown.
Do not over bake.
Sprinkle well wit sugar and cut immediately into bars.
